At the beginning of the Season, we set ourselves some “Game Changers’ to push our quality even higher as well as rationalise our growing business.
Our biggest input is obviously flour and we have been using Robin Hood flour up until now, which has given us very good results. We currently use over 1500lb of flour a week and we are delighted that we can now ship in King Arthur flour directly along with other specialty flours we've sourced such as gluten-free, spelt and rye flours.
King Arthur flour is much loved by bakers. It is non-GMO and is regarded as having the highest quality standards in the industry. We are using an unbleached and unbromated professional grade product, which is yielding excellent results so far.
Unbleached flour has not had any whitening chemical agents (ie bleach) added to it and is less ‘refined’ as the bleaching process lowers the protein content of the flour. Potassium bromate (“bromate”) is a flour ‘improver’ that strengthens dough and allows for higher rising in the oven. The primary concern regarding the use of bromates in baking is its demonstrated link to cancer in laboratory animals leading to it being banned in numerous countries, including the United Kingdom in 1990 and Canada in 1994.
And if those arn’t enough good reasons already, another reason we like King Arthur Flour is that the company is employee-owned by bakers and is over 200 years old. A whole two zero’s more than us!
